William Beaumont
William Beaumont (21 de noviembre de 1785, Lebanon, Connecticut[1] - 25 de abril de 1853, San Luis) fue un cirujano estadounidense.[2]

Prestó servicio durante muchos años como cirujano del Ejército de los Estados Unidos.
En 1825 atendió a un trampero (Alexis St. Martin) cuyo abdomen había sido perforado por una ráfaga de escopeta.[1]:102 Esa herida cicatrizó mal, creando una fístula gástrica. De manera que las secreciones gástricas podían salir por la fístula. Ese mismo año, Beaumont comenzó a experimentar con Alexis St. Martin investigando los procesos de la digestión gástrica recogiendo las secreciones que salían por la mal curada herida. Beaumont fue la primera persona de la historia en observar cómo ocurría la digestión humana en el estómago.[3][4] Y demostró que el jugo gástrico contenía ácido clorhídrico, hecho que confirmó su creencia de que la digestión era un proceso químico.[5] También realizó un informe acerca de los efectos de diversos alimentos sobre el estómago y definió a las bebidas alcohólicas como un causante de la gastritis. Todas sus observaciones fueron recogidas en un libro que publicó en 1833: "Experiments and Observations on the Gastric Juice and the Physiology of Digestion."
